Ingredients
  

Pineapple Chicken Stir Fry

  • 1 Red Pepper sliced
  • 1 cup Sugar snap peas
  • 1 large Chicken breast diced
  • 1 tbsp Avocado oil for cooking chicken
  • 1/2 cup pineapple chunks

Stir Fry Sauce

  • 1/4 cup Low Sodium sauce
  • 1 tbsp honey
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tbsp Rice vinegar
  • 2 tsp Sesame oil
  • 1/4 cup Pineapple juice
  • 1/4 tsp Red pepper flakes
  • 1 1/2 tsp Cornstarch

Instructions
 

  • Heat saute pan to medium-high heat.
  • Add avocado oil to pan and cook chicken until registers 165°.
  • Remove chicken from the pan and set aside. Add veggies to the heated pan and cook until blistered 5-10 minutes.
  • Add chicken, pineapple and sauce to pan and simmer 3-5 minutes or until thick and bubbling.
  • Serve warm. Recommend serving with rice.
