Name a delicious dessert duo…i’ll go first. Dark chocolate and almond butter!
So what could make this combination even better?…coffee. Yup, you read that right. Coffee. These dark chocolate mocha almond butter cups are the perfect combination of dark chocolate, almond butter and coffee. This sweet treat is perfect for any event, gathering or casual evening at home. The subtle hint of coffee adds just the right amount of flavor without being overpowering. The almond butter center has the perfect texture and great flavor that will keep you coming back for more. And let’s not forget about the healthy fats in the almond butter. These healthy fats are good for heart health.
For those of you who do not already know, I have a peanut allergy so growing up I never experienced chocolate peanut butter cups. I was told so many times that I was missing out on the perfect combination. Well, after making this peanut free homemade almond butter version, I now understand all of the hype.
Now, if you don’t have a peanut allergy, you can easily swap out the almond butter for peanut butter! On the other hand, if you are allergic to both peanuts and tree nuts, I recommend using Wow Butter which is a peanut and tree nut free option that is made from soy.
Dark Chocolate Mocha Almond Butter Cups
Ingredients
For the chocolate
- 1 cup Dark Chocolate Chips
- 2 tsp Instant Coffee
For the almond butter filling
- ¼ cup Almond Butter
- 4 tsp Powdered sugar
- 4 tsp milk
Instructions
- Prepare a cupcake pan by lining with cupcake liners
- Melt chocolate chips either in the microwave or on the stove by using a saucepan of boiling water with a glass bowl resting on top.
- When the chocolate is completely melted add instant coffee and stir to combine
- Divide 1/2 of the melted chocolate between 12 muffin cups. Chocolate should just cover the bottom of each muffin cup
- Put muffin pan with chocolate in the freezer while making the almond butter filling to allow for the chocolate to harden before adding the filling.
- Combine the almond butter, powdered sugar and milk until well incorporated
- Scoop 1 tsp of the almond butter fulling into each cup. Using a spoon gently press filling so it is evenly spread over the chocolate on the bottom.
- Divide the remaining melted chocolate between the 12 almond butter cups. The chocolate should just cover the almond butter filling.
