Pineapple Chicken Stir Fry. My family has been requesting a stir fry for a while now. I spent some time thinking of the flavors I wanted to incorporate into this recipe. I wanted to incorporate many fresh vegetables while also creating a hearty stir fry. When testing this recipe it did take a few tries to get it just right, but I think the final product is worth all the experiments!
I love a delicious colorful stir fry with a variety of vegetables and a delicious sauce. Stir fry is a meal that can be enjoyed during all times of year and is a relatively low time commitment. The versatility of this recipe is one of my favorite parts. You can be creative and use the fresh produce that you have available or the frozen veggies you have at home. For an easy prep vegetable option, choose the frozen fajita veggie mix from the frozen vegetable aisle at the store. This frozen veggie mix eliminates the required vegetable chopping and includes a combination of sliced peppers and onions which would be fantastic for a stir fry.
This stir fry only takes 30 minutes to prep and cook which makes it perfect for those busy nights. You can pair this stir fry with rice or noodles for a delicious filling dinner. I used chicken for protein, but you could also use tofu or beef if you prefer. This recipe lends for bountiful opportunities to make it your own.
Pineapple Chicken Stir Fry
Ingredients
Pineapple Chicken Stir Fry
- 1 Red Pepper sliced
- 1 cup Sugar snap peas
- 1 large Chicken breast diced
- 1 tbsp Avocado oil for cooking chicken
- 1/2 cup pineapple chunks
Stir Fry Sauce
- 1/4 cup Low Sodium sauce
- 1 tbsp honey
- 1 tsp garlic
- 1 tsp ginger
- 1 tbsp Rice vinegar
- 2 tsp Sesame oil
- 1/4 cup Pineapple juice
- 1/4 tsp Red pepper flakes
- 1 1/2 tsp Cornstarch
Instructions
- Heat saute pan to medium-high heat.
- Add avocado oil to pan and cook chicken until registers 165°.
- Remove chicken from the pan and set aside. Add veggies to the heated pan and cook until blistered 5-10 minutes.
- Add chicken, pineapple and sauce to pan and simmer 3-5 minutes or until thick and bubbling.
- Serve warm. Recommend serving with rice.
