- 1 large Chicken breast cut into bite size pieces
- 1/2 tbsp Olive oil
- 1/2 tbsp your favorite Italian seasoning blend
- 2 oz Dry spaghetti noodles
- 1 medium tomato
- 1/4 cup pesto
- Parmesan cheese (optional for topping)
Heat large sauté pan with olive oil to medium high heat. When pan is hot, add chicken and Italian seasoning blend
While chicken cooks, boil spaghetti noodles until al dente. Drain noodles and set aside.
Once chicken is fully cooked and has reached an internal temperature of 165℉ add drained noodles to the sauté pan.
Add pesto and diced tomatoes to the chicken and noodles and stir to combine.
Top with parmesan cheese if desired and serve warm
- This recipe reheats well and can be made the night before if needed, but I would recommend adding the tomatoes just before serving so they don't get mushy.
