Preheat oven to 400° and line baking sheet with parchment paper
Cut squash in half lengthwise and spoon out seeds.
Slice squash in ¼-½ inch thick slices
Place squash slices on baking sheet and drizzle oil, sprinkle garlic powder, parmesan cheese and parsley on top.
Toss/stir until evenly coated.
Roast in the oven at 400° for 20 minutes.
