How sweet it is to enjoy a tasty dessert after a long day. Sometimes I enjoy having a chocolaty treat in the afternoon to get me through the second half of the work day. In my mind, dessert should always contain chocolate. Are you with me? For a tasty chocolaty dessert with a little extra protein and fiber, try these delicious fudgy black bean brownies.
One of my favorite things about baking this recipe is the smell of fresh baked brownies in the air.
This recipe is very easy and one of my favorites. The protein, fat and fiber make this dessert satisfying and it will keep you full! Fudgy black bean brownies are great for birthday parties, family gatherings, summer cookouts or just your Monday afternoon treat.
To make this recipe, start with a can of black beans. I prefer to buy canned beans with no added salt when I can find them. For this recipe, you will want to drain and rinse the beans thoroughly. This is an important step because the liquid has a strong bean flavor which would give the brownies more of a black bean flavor if not drained well.
Next you will add the drained and rinsed black beans to your blender. Add in the eggs, vanilla, cocoa powder, applesauce, milk, and honey. Puree these ingredients until they are mixed well together. You want to make sure that the consistency is creamy and there are not large pieces of black beans throughout the batter.
After your batter is made, it is time to add the chocolate chips. Stir the chocolate chips into the batter.
Add the batter to prepared 8×8 baking pan. I prepared my pan by lining it with foil and spraying with cooking spray. Lining the pan helps with both the clean up and serving. I think we all know how difficult it is to get that first brownie out of the pan. The first piece usually ends up broken. By lining the pan with foil, once the foil is cooled off, you are able to use the foil to lift the brownies out of the pan and cut and serve them more easily.
Now it is time for the almond butter swirl. You could easily swap this out for peanut butter or if you need a peanut and tree nut free option, I recommend Wow Butter. To make the swirl add the almond butter, honey and milk to a saucepan and heat over medium heat. The ingredients will incorporate and become creamy and smooth enough to swirl into the brownie batter. Drizzle the almond butter mixture into the batter and use a knife or toothpick to swirl it into the batter.
Next, the most important step…top with additional mini chocolate chips before baking!
Bake brownies at 350 for 45 minutes. The center of the brownies should be set and no longer jiggle. I recommend letting the brownies rest in the pan for 10 minutes before lifting them out to cut and serve. This allows for the brownies to cool slightly and continue to firm up. I recommend storing the brownies in the refrigerator so they stay fresh for longer.
