Chicken Pesto Pasta

I love a tasty Italian dish. This chicken pesto pasta is great when you are looking for an easy Italian dish to make at home. The flavors in this recipe are perfect and the fresh tomato adds a layer of freshness that is so tasty.

Not only is this pasta delicious fresh, it also reheats very well. You can make this recipe ahead of time and quickly reheat to serve it for dinner. If you plan to make it ahead of time I recommend adding the tomatoes just before serving.

This recipe is very easy to make and only takes about 20 minutes to make. Although it is a quick and easy recipe, it is not lacking in flavor!

To make this recipe, start by cooking the diced chicken in a large pan over medium high heat with a small amount of olive oil. For this recipe I used olive oil but you could use your favorite cooking oil. While the chicken is cooking, add your favorite Italian seasoning blend. I use Mrs. Dash garlic herb seasoning and it is so delicious. Mrs.Dash seasonings are salt free so this spice blend will help keep the sodium level low in this recipe. I cooked the pasta while the chicken was cooking to help save time. I used a whole wheat pasta noodle but you could use a gluten free noodle, veggie noodle or Banza noodles if you prefer. When the pasta and chicken are done cooking, drain the pasta and add it to the chicken. Pour in the pesto sauce and tomatoes. Stir until the pesto is evenly distributed. 

This recipe pairs very well with a side salad or roasted broccoli. Serve warm and enjoy!

Ingredients

  • 1 large Chicken breast cut into bite size pieces
  • 1/2 tbsp Olive oil
  • 1/2 tbsp your favorite Italian seasoning blend
  • 2 oz Dry spaghetti noodles
  • 1 medium tomato
  • 1/4 cup pesto
  • Parmesan cheese (optional for topping)

Instructions

  • Heat large sauté pan with olive oil to medium high heat. When pan is hot, add chicken and Italian seasoning blend
  • While chicken cooks, boil spaghetti noodles until al dente. Drain noodles and set aside.
  • Once chicken is fully cooked and has reached an internal temperature of 165℉ add drained noodles to the sauté pan.
  • Add pesto and diced tomatoes to the chicken and noodles and stir to combine.
  • Top with parmesan cheese if desired and serve warm

Notes

  • This recipe reheats well and can be made the night before if needed, but I would recommend adding the tomatoes just before serving so they don't get mushy.
