Ingredients
- 1 large Chicken breast cut into bite size pieces
- 1/2 tbsp Olive oil
- 1/2 tbsp your favorite Italian seasoning blend
- 2 oz Dry spaghetti noodles
- 1 medium tomato
- 1/4 cup pesto
- Parmesan cheese (optional for topping)
Instructions
- Heat large sauté pan with olive oil to medium high heat. When pan is hot, add chicken and Italian seasoning blend
- While chicken cooks, boil spaghetti noodles until al dente. Drain noodles and set aside.
- Once chicken is fully cooked and has reached an internal temperature of 165℉ add drained noodles to the sauté pan.
- Add pesto and diced tomatoes to the chicken and noodles and stir to combine.
- Top with parmesan cheese if desired and serve warm
Notes
- This recipe reheats well and can be made the night before if needed, but I would recommend adding the tomatoes just before serving so they don't get mushy.
