I always love getting fresh produce from my parents garden. It is always so fun deciding what I want to make. I received fresh rhubarb from them and was deciding what to do with it. You can make a variety of cakes, cookies, pies, sauces and more! This time I decided to add peaches with the rhubarb since peaches have a delicious flavor and sweetness to balance out the tart flavor of the rhubarb. The result was DELICIOUS and I am so excited to share it with you!

I just love how easy it is to make a homemade crisp. The recipes are simple and the outcome is so tasty. This recipe is no different. Start by combining the diced rhubarb, sliced peaches, granulated sugar and cornstarch in a small mixing bowl. For this recipe I used thawed and drained frozen sliced peaches that I had on hand. You could also use drained canned peaches or fresh, whatever you have available. Once those ingredients are mixed well together, add them to the prepared baking dish.
Next, make the crumble topping by combining oats, brown sugar, margarine, flour, and cinnamon in a medium bowl. Use a fork or pastry blender to combine the ingredients. The ingredients should be moist and stick together in clumps when you are done. There should not be any dry oats or flour sitting in the bottom of the bowl. The last thing for the topping is to stir in the chopped almonds and chia seeds.
Crumble the topping on top of the rhubarb peach mixture, add the remaining chopped almonds and bake! Mine took about 50 minutes to bake. You know it is ready when it is bubbling and the top is golden brown. Enjoy!

Ingredients
- 3 cups Rhubarb diced
- 2 cups Peaches sliced
- 1/4 cup Granulated Sugar
- 2 tbsp Cornstarch
- 1 cup Rolled Oats
- 1/4 cup Brown Sugar packed
- 6 tbsp Margarine room temperature
- 1/2 cup Flour
- 1 tsp Cinnamon
- 1 tbsp Chia seeds
- 1/2 cup Almonds coarsely chopped
Instructions
- Preheat oven to 350°F and grease an 8x8 baking dish
- Combine rhubarb, peaches, granulated sugar and corn starch in medium sized mixing bowl and dump into prepared baking dish.
- Add oats, brown sugar, margarine, flour and cinnamon to a medium sized mixing bowl. Use a bladed pastry blender or fork to cut the margarine into the other ingredients.
- Stir in chia seeds and half of the coarsely chopped almonds.
- Crumble the topping over the rhubarb peach mixture in the dish.
- Sprinkle the remaining 1/4 cup almonds on top.
- Bake for 50 minutes or until the crumble topping is brown and rhubarb peach mixture is bubbling.
