Savory Acorn Squash

There are many different types of squash. Acorn squash is one of my favorites. It is shaped like an acorn with a dark green exterior and yellow interior. This squash is oftentimes served sweet and is delicious with brown sugar and cinnamon. My family often enjoyed acorn squash this way when I was growing up. This savory recipe is a delicious change that will have you going back for more! The parmesan cheese crisps up nicely and adds great flavor.

How to prepare squash: This technique can work for many types of squash including butternut, acorn or spaghetti squash.

If you are not familiar with preparing squash, I recommend starting by cutting off the top of the squash where the stem is located. You may also need to cut off the bottom of the squash as well for ease of cutting. The stems are thick and can be difficult to cut through. Next, using a sharp knife, cut the squash in half lengthwise. Once this is complete, you can scoop out the seeds and you are ready to go! 

Tips for ease of cutting: Some squashes are stubborn and nearly impossible to cut in half. If this is the case, consider this easy tip. Using your knife, make slits down the middle of the squash lengthwise where you are wanting to cut. Place the squash in the microwave and heat for 3 minutes. Try cutting and if still too difficult cook for an additional minute and repeat until squash is able to be cut in half. 

Like most of my recipes, this one is super easy to make. Once you have prepared and cut the squash, place it on the prepared pan. I used parchment paper for my pan. It just helps keep the yummy crispy squash from sticking to the pan. Drizzle with oil and seasonings. I chose to use avocado oil because of the high smoke point as well as the tasty flavor but you can use whatever you prefer. Toss/stir the squash to get an even coating of the seasonings and oil. Now just roast in the oven and that’s it! Mine took about 20 minutes in the oven. You want the squash to be soft with some crispy brown on it!

Ingredients

  • 1 Acorn squash
  • 1 tsp Avocado oil
  • ½ tsp Garlic powder
  • 1 tbsp Parmesan cheese grated
  • ½ tsp Dried parsley

Instructions

  • Preheat oven to 400° and line baking sheet with parchment paper
  • Cut squash in half lengthwise and spoon out seeds.
  • Slice squash in ¼-½ inch thick slices
  • Place squash slices on baking sheet and drizzle oil, sprinkle garlic powder, parmesan cheese and parsley on top.
  • Toss/stir until evenly coated.
  • Roast in the oven at 400° for 20 minutes.

Notes

Notes: You can combine ingredients in a large bowl and stir to coat if desired. I chose to use the pan to keep from dirtying more dishes than necessary.
Baking notes: If you don't use parchment paper during baking you may have issues with squash sticking to the pan.
