Greek Salad is a perfect side dish for summer cookouts and backyard get togethers. This delicious, light salad will be great to serve at your next family BBQ or picnic! This recipe has so much flavor and is very filling. If you are looking for a recipe that will help use up the produce in your garden this summer, this is for you. Using fresh tomatoes, cucumbers and onions adds just the right flavor, texture and color to this salad. The variety of ingredients adds many vitamins and minerals as well as fiber. 

Not only is there a variety of vitamins and minerals in this recipe, there is also healthy fats from the olive oil. These fats may play a role in improving heart health and increasing satiety. The chickpeas in this recipe are a great source of plant based protein. With the combination of protein, fiber and fat, you will be feeling full and satisfied after eating this dish.

In addition to being oh so satisfying, this recipe is full of flavor. From the onion to the dill and the saltiness from the olives and feta, this recipe is so tasty.  

This recipe is so easy to make. Dice all the vegetables and place them in a bowl. Combine the olive oil, vinegar, seasoning mixture in a small bowl then drizzle it over the vegetable and chickpea ingredients. Stir to combine. I recommend letting this salad sit in the refrigerator for at least 30 minutes before serving to allow the flavors to blend together.

Ingredients

  • 1 Cucumber diced
  • 1 Tomato diced
  • ½ cup Kalamata Olives coarsely chopped
  • cup Feta cheese
  • ¼ cup Onion diced
  • 1 can Chickpeas drained and rinsed
  • 2 tsp Lemon juice
  • 4 tsp Olive oil
  • ½ tsp Dried dill weed
  • 1 tsp Mrs.Dash garlic herb seasoning
  • 1 tsp Apple cider vinegar

Instructions

  • Dice the cucumber, tomato, onion and olives.
  • Combine the first 6 ingredients in a bowl.
  • Combine the lemon juice, olive oil, dill, Mrs. Dash seasoning, and vinegar in a small bowl
  • Add the sauce to the vegetable mix and stir in the chickpea mixture.
