This side dish is easy enough to serve for a quick weeknight dinner or a holiday dinner. Don’t let your weeknight sides get boring when you can change it up with this delicious roasted brussels sprouts and sweet potato combination. During the holidays, don’t worry about spending all day in the kitchen with a side like this that only takes 10 minutes to prepare and 20 minutes to roast in the oven!
Making this recipe is super easy. The most time consuming part of this dish is preparing the vegetables. For the sweet potato, I wash the potato well and dice into small cubes. I like to leave the skin on the potato but if you prefer to peel the skin off, that is ok too. Preparing the brussel sprouts is a little different. I like to prepare mine by peeling off the outer leaves, rinse with cool water, cut off the small stem and cutting them in half from top to base.
After the vegetables have been prepared, place them in a large bowl with the oil, and seasonings. I prefer to use avocado oil for this recipe. It has a high smoke point and can withstand the high heat of the oven, it is also full of healthy monounsaturated fats. These healthy fats can help improve cholesterol levels as well as help with satiety. The seasonings I chose for this dish are chili powder, garlic powder, and cayenne pepper. These seasonings are great for adding flavor to the dish, without increasing the sodium level. Low sodium dishes are great for reducing blood pressure and improving overall heart health.
Now all you have to do is spread the veggies out on a baking sheet and bake for 20-25 minutes!
Roasted Brussel Sprouts and Sweet Potatoes
Ingredients
- 1 lb Brussel Sprouts outer leaves removed, sliced in half
- 1 Medium Sweet Potato diced
- 2 tbsp Avocado Oil
- 1 tsp Chili Powder
- ¼ tsp Garlic Powder
- Dash salt
- Dash Cayenne Pepper
Instructions
- Preheat oven to 425°
- Prepare brussel sprouts and sweet potato and place in a large bowl
- Add oil, and seasonings. Stir to combine.
- Spread out evenly on baking sheet.
- Bake for 10 minutes, stir and bake for another 10 minutes until vegetables are golden brown. If vegetables are not browned after 20 minutes roast for another 5 minutes.
- Serve warm.
