Instructions
Preheat fry pan to medium heat and spray with nonstick cooking spray
Add eggs to pan and cook until yolk is firm (approximately 5 mins per side)
While the eggs are cooking, cut the English muffins in half and toast in the toaster
Once English muffins are toasted, spread Pesto on one half and mashed avocado on the other half.
Add sliced tomato and spinach leaves
When the egg is almost done cooking add cheese on top and cover the pan while the cheese melts
Add egg and cheese to sandwich and serve warm,
