Breakfast time is the time of day when some are still sleeping, and others are rushing around to get ready for work. Breakfast is a controversial meal, hated by some, and loved by others. I know everyone isn’t the same, but I personally LOVE making myself breakfast and sitting down to enjoy this meal before I start the day. Now, don’t get me wrong, I have my fair share of rushed mornings running around getting ready for work, but I will always cherish the mornings when I can eat my breakfast in peace. So maybe you are someone who enjoys eating breakfast, but what happens when your normal breakfast of oatmeal, eggs and toast or cereal gets boring? Do you turn to donuts and fast food breakfast for a change? Well, not anymore. This Gourmet Breakfast Sandwich will be just what you need to change up your morning routine. 

This sandwich is super easy to make. You can whip up this tasty breakfast sandwich in about 15 minutes! Not only are eggs a great source of inexpensive complete protein, eggs also contain many vitamins and minerals including vitamins A, D, E, and B12 as well as Selenium, Zinc, Iron and Choline. The fat found in the yolk of eggs helps keep us full and satisfied for longer.

I love that this is a very inexpensive meal complete with protein, fats and carbohydrates! Don’t forget about the fresh tomato and spinach that add freshness and color to this delicious sandwich. And the pesto just adds another layer of flavor that is oh so good.

Ingredients

  • 2 Whole Wheat English Muffins
  • 2 Eggs large
  • 2 Slices Swiss Cheese
  • 1 Medium Tomato sliced
  • 1 Avocado mashed
  • 1/2 cup Fresh Spinach
  • 2 tbsp Pesto

Instructions

  • Preheat fry pan to medium heat and spray with nonstick cooking spray
  • Add eggs to pan and cook until yolk is firm (approximately 5 mins per side)
  • While the eggs are cooking, cut the English muffins in half and toast in the toaster
  • Once English muffins are toasted, spread Pesto on one half and mashed avocado on the other half.
  • Add sliced tomato and spinach leaves
  • When the egg is almost done cooking add cheese on top and cover the pan while the cheese melts
  • Add egg and cheese to sandwich and serve warm,

What I love about this breakfast:

  • EGGcellent nutrition – Eggs have gotten a bad reputation in previous years due to their rich source of dietary cholesterol in the egg yolk. Contrary to what you may think, dietary cholesterol is different from blood cholesterol. In fact, in 2015 the Dietary Guidelines for Americans removed the recommendation of limiting dietary cholesterol consumption to 300mg per day. Research has shown that dietary cholesterol plays less of a role on LDL cholesterol than was once thought. Although keep in mind that it is recommended to keep your daily egg consumption to no more than 1 egg per day. Eggs are nutritionally a great addition at breakfast time. Not only are eggs a great source of inexpensive complete protein, eggs also contain many vitamins and minerals including vitamins A, D, E, and B12 as well as Selenium, Zinc, Iron and Choline. Eggs do contain fats, both saturated and unsaturated fats, but keep in mind this is great news because the fat present in eggs helps with the absorption of the fat soluble vitamins (Vitamins A, D and E) found in the egg.
