It’s almost time for Super Bowl Sunday! This means it is time to get some delicious appetizer ideas ready to serve for your family! Whether you will have a small gathering or it will just be you, fun appetizers are a must while watching the big game! If you are someone who loves relaxing and watching the game at a local restaurant, with a fresh basket of deep fried pickles, this recipe is for you. This oven “fried” pickle recipe takes this delicious appetizer and makes a few changes including baking instead of deep frying for a lower fat option that is equally as delicious! Have no fear, the crunch is still here. These are just as delicious and crunchy as a deep fried pickle. Although baking fried pickles can help lower fat content, the high sodium level will remain as pickles are high in sodium. This does not mean that we need to avoid them all together but rather be mindfully enjoy in moderation as  high daily sodium intake can increase risk of high blood pressure. I love that this recipe is relatively easy and does not take long to make. 

Start by breading the pickles. Gather 2 small plates and 1 medium sized bowl. On one of the plates combine the flour, 1/4 tsp garlic and 1/8 tsp cayenne pepper. Whisk the egg in the bowl. On the other small plate combine the breadcrumbs and remaining garlic powder and cayenne pepper. 

To bread the pickles you start by placing the pickles in the flour mixture, then egg wash, then the breadcrumb mixture. This order is important because the egg wash is what helps hold the breadcrumbs on the pickles. When you are coating the pickles in breadcrumbs you may need to gently press on the pickles to help more breadcrumbs stick for a nice coat of breading.

Prepare a baking sheet with cooking spray. I like to use avocado oil. After you place the prepared pickles on the pan, spray the top of the pickles with additional cooking spray.

While the pickles are baking, you MUST make the sriracha ranch dipping sauce. It is super simple and you will be so happy you did. Just combine the ranch and sriracha. Yup, it is that easy!

Ingredients

For the Pickles

  • ¼ cup Flour
  • ½ cup Whole wheat panko breadcrumbs
  • ¾ tsp Garlic powder ¼ tsp in the flour, ½ tsp in the breadcrumbs
  • ¼ tsp Cayenne pepper ⅛ tsp in the flour, ⅛ tsp in the breadcrumb
  • 1 Egg
  • 8 ounces Dill pickle chips
  • Cooking spray Enough for a light coat on top of the pickles

Sriracha Ranch Sauce

  • cup Ranch
  • ½ tbsp Sriracha

Instructions

  • Preheat oven to 425°F
  • Prepare baking pan by spraying with cooking spray
  • Combine flour, ¼ tsp garlic powder and ⅛ tsp cayenne pepper in a bowl or large plate
  • Crack egg in a bowl and whisk
  • Combine breadcrumbs, ½ tsp garlic powder and ⅛ tsp cayenne pepper
  • Coat pickles in flour, tapping off excess
  • Dip both sides of pickles in egg wash
  • Coat both sides of the pickle in breadcrumbs.
  • Place coated pickles on baking sheet and spray an even coat of cooking spray on top
  • Bake pickles for 10 minutes, flip, apply a light coat of cooking spray and cook for an additional 5 minutes.

For the sauce

  • Combine the ranch and sriracha until well incorporated and enjoy dunking your baked "fried" pickles!
