The crisp fall morning air and the beautiful change in the leaves calls for all the pumpkin spice recipes. If you are like me, your pantry is stocked with pumpkin for the months ahead. You dream of pumpkin and are constantly thinking of new ways to incorporate it into your meals.
One of my favorite things is making recipes that are quick and easy. If you are preparing for a family gathering for Thanksgiving, consider making these pumpkin spice balls for a yummy passing dish or dessert! These energy bites have fiber, protein and healthy fats. Guess what, these are the wonderful components of a balanced snack! Protein, fiber and healthy fat help keep us feeling full throughout the day. Not only will these things help keep us full but healthy fats found in almond butter can help improve cholesterol levels. This yummy versatile treat can be packed as a snack, eaten as a breakfast on the go or even topped with cool whip and served as dessert.
When making these delicious energy bites, start with a medium sauce pan and all ingredients except the oats and chia seeds. Heat the ingredients in the sauce pan on medium low heat. This step is important to get all of the ingredients soft and gooey to help everything mix well together! This step is especially important for incorporating the almond butter (or other nut butter) since it does not like to mix well.
Once everything is getting soft, stir in the oats and chia seeds. Stir well until the oats are coated in the warm gooey mixture!
The last easy step is rolling the mixture into 1inch balls using your hands. To make this last step easier, you could use a small cookie scoop to scoop batter into small balls. This recipe really is that simple!
Pumpkin Energy Bites
Ingredients
- 1 cup Almond Butter (Or other nut butter)
- 2 tbsp Honey
- 2 tsp Pumpkin Pie Spice
- 1 tsp Cinnamon
- ½ tsp Cloves
- ½ cup 100% Pumpkin Puree (heaping)
- 2 tbsp Milk
- 1 tsp Vanilla extract
- 2½ Cups Rolled Oats
- 1 tbsp Chia seeds
Instructions
- Combine all ingredients except the oats and chia seeds into a medium sized pot
- Turn the burner to medium-low
- Stir ingredients until warm and well-incorporated.
- Remove the pot from the heat and add the oats and chia seeds
- Stir until oats are coated in the pumpkin mixture.
- Using your hands, roll into 1 inch balls
- Sprinkle with pumpkin spice and serve.
